Rob and K
arin Lawler- Owners Rob and Karin have owned The Truffle Cheese Shop since 2007. They met in San Francisco in 1997. Rob was going to culinary school at The California Culinary Academy and Karin was working as a nutrition counselor at Project Open Hand. Rob has cooked in most of Denver’s best restaurants: Luca d’Italia, Rioja, Brasserie Rouge, Duo, Via and Potager. Karin brings her service and wine experience to The Truffle Cheese Shop. Most recently, she was the wine buyer at Potager for five years. Their son Ronnie joined the cheese family in 2007 and Sam in 2010.
Janet- Shop Manager
Janet was born in Denver, grew u
p in Summit County and now lives near Evergreen. She has worked at The Truffle Cheese Shop for five years. Besides a love of food and cooking, she is a fine artist who has works throughout the United States, Europe and Canada. She is also a co-owner of Solstice Candles and creates beautiful candles out of special wine bottles. We credit Janet for the beauty and stylishness of the shop.
Virginia is from Lakewood, Colorado. She is interested in transforming American perceptions about food. Her enthusiasm for food and cooking is contagious! When she isn’t cutting into enormous wheels of cheese at the shop, you can find her milking cows and goat for Ugly Goat Milk Company.
Bre- Yes, just like the cheese!
Bre moved to Colorado in 2005 from Boston, Massachusetts. She worked in restaurants in Aspen before moving to Denver last year to study nutrition. Bre combines her passion for food and cooking to promote nutrition through community involvement. She develops volunteer opportunities and facilitates produce donations for The Delores Project and nonprofits focused on fighting hunger.
Miguel- Cheesemonger
Miguel is known as the best dressed staff member at The Truffle Cheese Shop. He brings his food knowledge, passion and great taste to the cheese case. Miguel is heading up our Farmer’s Markets as well as working in the shop. Originally from Denver, Miguel has worked in some of Boston’s best restaurants and has spent time working with orphans in Katmandu, Nepal.
